Matcha & Coconut Marshmallows

How do you make your favorite Matcha Latte even better? Throw some matcha and coconut marshmallows in it, snuggle up on the couch with a good book and drift away into bliss. 

Ingredients: Matcha Layer

  • 1 1/2 packets unflavored gelatin 
  • 3/4c granulated sugar
  • 5 tbs light corn syrup divided 
  • 1/2 tsp Matcha Tea powder
  • 1/2 cup water
  • Candy Thermometer

Line a 13x9 baking pan with parchment making sure there is a little overhang on each side. Lightly coat with cooking spray. In the bowl of a stand mixer with the whisk attachment add 1/4 c cold water and sprinkle gelatin over it letting it fully soak in about 8 minutes. Meanwhile, take the Matcha Tea powder and mix it in 1/2c water until dissolved and lightly foamy. Pour tea mixture into a small sauce pan and add 2 tbs of the light corn syrup and the granulated sugar. Cook on medium until temp reaches 230 degrees. Add 3 tbs of corn syrup to geletain mixture. When the mixture comes to temperature at 230 degrees remove from oven , and while stand mixture is on high pour it in on the side of the bowl. Mix until soft peaks form and bowl is cool about 5-7 minutes. Scrape tea mixture into prepared baking dish and quickly smooth over. Let this layer sit uncovered for 30 minutes or until cool before adding the coconut layer. 

Ingredients: Coconut Layer

In the stand mixer add 1/4c cold water into bowl fitted with the whisk attachment. Sprinkle over gelatin and led soak in for 8 minutes. Meanwhile add 2 tbs light corn syrup, sugar, and 1/2c coconut milk to small saucepan. Heat until it reaches 230 degrees on your candy thermometer. While coconut mixture is cooking add 3 tbs light corn syrup to gelatin mixture. When coconut mixture reaches 230 degrees, with stand mixer on high pour in on the side of the bowl. Mix on high until soft folding peaks form or bowl is cool, about 5-7 minutes. Scrape coconut mixture onto cooled Matcha Marshmallow layer evening out with the spatula. Let sit uncovered for 4-6 hours before cutting. Remove from dish carefully onto a surface dusted with confectioners sugar. Cut using a pizza cutter lightly sprayed with cooking oil to prevent sticking. Dust marshmallows and enjoy as a snack or a lovely addition to your Matcha Latte on a chilly afternoon!
