Boat Strata: Easy Like Thursday Morning
I am constantly trying to conceive dishes on our boat that will do two things. Let me have my creativity with food and keep my boys full for at least two hours. This strata does just that and it tastes like home, not to mention you make it the night before! Any morning when mama gets to enjoy her coffee without scrambling is a happy morning.
I have had an obsession with strata since watching one of my favorite Christmas movies The Family Stone. In the movie Sara Jessica Parker tries to warm up to her boyfriend’s family by cooking them her family’s traditional Strata for Christmas breakfast. It ends up all over the front of her… ANYWAY
That’s where I first came across strata. It is basically savory bread pudding with mushrooms, onions, thyme and in this case bacon and Swiss cheese.
Not only is it easy and awesome but it will serve breakfast for two days…I’m In!
This is also a great dish for when you have company!
Here’s the recipe for my favorite boat breakfast…Boat Strata!
Butter a 9 x 10 casserole baking dish.
· 1 Ciabatta Loaf
· 6 Eggs at room temp, lightly beaten
· 1 c. Milk
· 1 lb. Bacon
· 4-6 oz. Shredded Swiss Cheese
· 2 TBS
· 8 oz. Cremini Mushrooms Diced (Can substitute Button Mushrooms)
· 2 Small Yellow Onions Diced
· 1 TBS Dried Thyme
· 1 TBS Kosher Salt
· 1 TSP Fresh Ground pepper
Rip off quarter sized pieces of the Ciabatta bread into a large mixing bowl. In a heavy pot heat olive oil and sauté the onions and mushrooms until onions are translucent and mushrooms are lightly browned. About 10 minutes. Let cool slightly and add to Ciabatta bread in mixing bowl. Add shredded Swiss cheese to the mixing bowl. Cut bacon into bite sized pieces. In the same heavy pot cook the bacon until crispy and add to the mixing bowl. In a separate bowl add the 6 eggs, milk thyme, salt and pepper and whisk until blended. Add to mixing bowl of Ciabatta, onions, mushrooms, bacon and cheese. Mix together with a spoon or hands until combined. Once mixture is combined put it into your prepared baking dish. Press down lightly, cover with plastic wrap and refrigerate overnight. In the morning preheat your oven to 350 degrees. Put Strata in and bake 30-45 minutes until it happily bubbles and browns on top and on the edges.
Once done let cool slightly, cut into portions and serve!
So easy yet impressive and make ahead. Doesn’t get much better than that!
