Chipotle Alfredo Pita Pizza with Chicken Apple Sausage, Shallots, Sun Dried Tomato, Mozzarella and Cilantro

As much as I live to cook and explore recipes, I also am a wife with two young boys so I defiantly have the nights where cooking makes me exhausted just thinking about it. That's where the pita pizza comes in and saves the night. It is easy, delicious, fast, and my kids love it. They are one of my favorite weeknight dinners because you can get creative and it's easy to keep the toppings off of some for the kids and the toppings Kevin and I want on ours. Less whining and happy faces, I'm in! Here's the easy peasy recipe! 

Chipotle Alfredo Sauce: 6-8 Pita Pizzas

  • I small can chipotle peppers
  • 1 small shallot, minced
  • 4 tbs olive oil
  • 2 garlic cloves, minced
  • 1 pinch red pepper flakes
  • 2 cups whole milk 
  • 1/4 c flour
  • 1 cup pecorino romano 
  • **Cooks Note: In a hurry? Buy jarred alfredo sauce in the pasta sauce section of your market, not as good as homemade but will work just fine on a busy weeknight. Just mix in sauce from canned chipotle peppers. 

In a medium saucepan add 4 tbs olive oil. Heat on medium high until hot then add shallots, garlic and red pepper flakes. Sautee until fragrant, about one minute. Add flour and stir into oil creating a roux. Let flour cook out about 1 minute. Add in whole milk and whisk together until well combined and mixture thickens. If too thick add more milk a little at a time to thin white sauce out. Remove from heat. Add the pecorino and stir until all the cheese has melted. Take 2 tbs of the sauce in the canned chipotle peppers. It carries a pretty good heat so taste as you go. Reserve the whole canned peppers for a later time. 

Pizza: 6-8 pita pizzas

  • Chipotle Alfredo
  • Fresh pita bread
  • 1 pkg chicken apple sausage, cooked in a pan and sliced
  • 1 small shallot
  • 1/2 c sun dried tomatoes
  • 1/2 c fresh chopped cilantro 
  • 2-3 c mozzarella cheese

Preheat the oven to 425 degrees. on your pita bread spread out chipotle alfredo as you would marinara sauce. Add mozzarella cheese, shallots, sun dried tomatoes and sausage. Cook in oven until cheese is browning and bubbly about 8 minutes. Remove from oven sprinkle over fresh cilantro, cut into fours and enjoy!
